Café de Paris Crust
Savoury, aromatic and made for lamb. Café de Paris combines butter, herbs and spices to create a deliciously flavourful crust.
Café de Paris seasoning is a classic of French cuisine and pairs beautifully with lamb. It works particularly well with a leg of lamb, which is finished with the seasoned butter mixture and grilled until golden.
Ingredients
For a leg of lamb of approx. 2 kg
• 150 g softened butter
• 1 tsp curry powder
• 1 tsp sweet paprika
• ½ tsp garlic powder
• ½ tsp onion powder
• 1 tsp parsley
• 1 tbsp fine white breadcrumbs
• 2 egg yolks
• 1 dash Worcestershire sauce
• Salt and pepper
Preparation
Mix all the ingredients together until smooth, then refrigerate.
Cook the leg of lamb until just before it reaches your preferred level of doneness. Spread the Café de Paris mixture over the lamb in a layer approximately ½ cm thick. Then place under a hot grill at 220°C for 3–5 minutes until golden brown.
Halal Note
Choose a Halal-compliant Worcestershire sauce, as some products may contain alcohol. If a suitable Worcestershire sauce is not available, replace it with 1 tsp lemon juice and ½ tsp mustard. This will retain much of the savoury character.
